A delicious and innovative twist on traditional pulled pork, using jackfruit as a plant-based alternative.


Ingredients

  • 2 cans young green jackfruit in brine, drained and rinsed
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup barbecue sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Slider buns
  • Coleslaw (optional, for topping)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and sauté until translucent.
  3. Stir in minced garlic and cook for another minute.
  4. Add the drained jackfruit, smoked paprika, cumin, salt, and pepper. Cook for about 5 minutes.
  5. Pour in the barbecue sauce and mix well. Simmer for 10-15 minutes until the jackfruit is tender and can be shredded with a fork.
  6. Assemble the sliders by placing the jackfruit mixture on slider buns and topping with coleslaw if desired.

Notes

  • Make sure to use young green jackfruit, not ripe jackfruit.
  • Feel free to adjust the spices and barbecue sauce to your taste.
  • These sliders can be made ahead of time and reheated before serving.
