- 1 pound fresh calamari, cleaned and tentacles separated
- 1 cup cooked rice
- 1/2 cup Italian sausage, casing removed
- 1/4 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 1 cup marinara sauce
- 1 tablespoon olive oil
- 1 lemon, cut into wedges for serving
Instructions
- Preheat your oven to 375°F.
- In a skillet over medium heat, add the olive oil and sauté the garlic until fragrant, about 1 minute.
- Add the Italian sausage and cook until browned, breaking it apart with a spoon.
- In a large bowl, combine the cooked rice, sautéed sausage and garlic, Parmesan cheese, breadcrumbs, parsley, oregano, red pepper flakes, salt, and pepper. Mix well until all ingredients are combined.
- Stuff each calamari tube with the rice mixture, packing it tightly but leaving the ends open. Secure the ends with toothpicks to prevent the filling from spilling out during cooking.
- Place the stuffed calamari in a baking dish and pour the marinara sauce over the top.
- Cover the dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the calamari is tender.
- Serve hot with lemon wedges on the side.
Notes
- For added flavor, consider adding chopped olives or sun-dried tomatoes to the stuffing mixture.
- You can also substitute quinoa for rice for a gluten-free option.
