Ingredients

  • 1 pound fresh calamari, cleaned and tentacles separated
  • 1 cup cooked rice
  • 1/2 cup Italian sausage, casing removed
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1 cup marinara sauce
  • 1 tablespoon olive oil
  • 1 lemon, cut into wedges for serving

Instructions

  1. Preheat your oven to 375°F.
  2. In a skillet over medium heat, add the olive oil and sauté the garlic until fragrant, about 1 minute.
  3. Add the Italian sausage and cook until browned, breaking it apart with a spoon.
  4. In a large bowl, combine the cooked rice, sautéed sausage and garlic, Parmesan cheese, breadcrumbs, parsley, oregano, red pepper flakes, salt, and pepper. Mix well until all ingredients are combined.
  5. Stuff each calamari tube with the rice mixture, packing it tightly but leaving the ends open. Secure the ends with toothpicks to prevent the filling from spilling out during cooking.
  6. Place the stuffed calamari in a baking dish and pour the marinara sauce over the top.
  7. Cover the dish with aluminum foil and bake for 25 minutes.
  8. Remove the foil and bake for an additional 10 minutes, or until the calamari is tender.
  9. Serve hot with lemon wedges on the side.

Notes

  • For added flavor, consider adding chopped olives or sun-dried tomatoes to the stuffing mixture.
  • You can also substitute quinoa for rice for a gluten-free option.
