  • 4 large eggs
  • 1 cup buttermilk
  • 2 tablespoons lemon zest
  • 1/4 cup fresh lemon juice
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • Additional lemon zest for garnish

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the buttermilk, lemon zest, lemon juice, and vanilla extract.
  5. In a separate bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Divide the batter evenly between the prepared cake pans and smooth the tops.
  8. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  9. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  10. In a medium bowl, whip the heavy cream and powdered sugar until stiff peaks form.
  11. Once the cakes are cool, spread a layer of whipped cream between the two layers and on top of the cake.
  12. Garnish with additional lemon zest before serving.

Notes

  • For a stronger lemon flavor, increase the amount of lemon zest.
  • This cake can be made a day in advance and stored in the refrigerator.
