Description

Delicious Italian Custard Bomboloni filled with creamy pastry cream and dusted with powdered sugar.


Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1/2 cup whole milk, warmed (about 110°F)
  • 2 large eggs
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup pastry cream (store-bought or homemade)
  • Vegetable oil, for frying
  • Powdered sugar, for dusting

Instructions

  1. In a large mixing bowl, combine the flour, sugar, and salt. In a separate small bowl, dissolve the yeast in the warmed milk and let it sit for about 5 minutes until frothy.
  2. Add the yeast mixture, eggs, melted butter, and vanilla extract to the flour mixture. Mix until a dough forms.
  3. Knead the dough on a lightly floured surface for about 5-7 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
  5. Once risen, punch down the dough and roll it out to about 1/2 inch thick. Cut out circles using a 3-inch round cutter.
  6. Place a teaspoon of pastry cream in the center of half the circles. Top with the remaining circles and pinch the edges to seal.
  7. Heat vegetable oil in a deep pot or fryer to 350°F. Fry the bomboloni in batches for about 2-3 minutes on each side until golden brown.
  8. Remove from oil and drain on paper towels. Dust with powdered sugar while still warm.

Notes

  • For a chocolate twist, fill the bomboloni with chocolate pastry cream instead of vanilla.
  • To make them extra festive, add a splash of orange zest to the dough for a citrus flavor.
