Description
Delicious Italian Custard Bomboloni filled with creamy pastry cream and dusted with powdered sugar.
Ingredients

- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1 packet (2 1/4 teaspoons) active dry yeast
- 1/2 cup whole milk, warmed (about 110°F)
- 2 large eggs
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 cup pastry cream (store-bought or homemade)
- Vegetable oil, for frying
- Powdered sugar, for dusting
Instructions
- In a large mixing bowl, combine the flour, sugar, and salt. In a separate small bowl, dissolve the yeast in the warmed milk and let it sit for about 5 minutes until frothy.
- Add the yeast mixture, eggs, melted butter, and vanilla extract to the flour mixture. Mix until a dough forms.
- Knead the dough on a lightly floured surface for about 5-7 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
- Once risen, punch down the dough and roll it out to about 1/2 inch thick. Cut out circles using a 3-inch round cutter.
- Place a teaspoon of pastry cream in the center of half the circles. Top with the remaining circles and pinch the edges to seal.
- Heat vegetable oil in a deep pot or fryer to 350°F. Fry the bomboloni in batches for about 2-3 minutes on each side until golden brown.
- Remove from oil and drain on paper towels. Dust with powdered sugar while still warm.
Notes
- For a chocolate twist, fill the bomboloni with chocolate pastry cream instead of vanilla.
- To make them extra festive, add a splash of orange zest to the dough for a citrus flavor.
