Delicious and healthy raw cranberry nut bites that are easy to make and perfect for a snack.
Ingredients

- 1 cup raw almonds
- 1 cup raw walnuts
- 1 cup unsweetened dried cranberries
- 1/2 cup unsweetened coconut flakes
- 1/4 cup chia seeds
- 1/4 cup maple syrup or honey
- 1 teaspoon vanilla extract
- 1/2 teaspoon sea salt
Instructions
- Place the raw almonds, walnuts, dried cranberries, coconut flakes, and chia seeds into a large bowl and mix thoroughly.
- In a small saucepan, gently heat the maple syrup (or honey) and vanilla extract over low flame until warm and slightly runny.
- Remove from heat and add the sea salt, stirring until dissolved.
- Drizzle the sweet mixture over the nut and fruit blend, stirring until everything is nicely coated.
- Prepare an 8×8-inch baking dish by lining it with parchment paper and transfer the mixture into the dish.
- Use a spatula or your hands to firmly press the mixture down into an even layer.
- Place the dish in the refrigerator for a minimum of 2 hours to allow it to firm up.
- Once set, lift the mixture out using the parchment paper and slice it into squares or bars.
Notes
- For a delightful chocolate flavor, incorporate 1/4 cup of dark chocolate chips into the mixture before pressing it into the dish.
- Feel free to swap out dried cranberries for other dried fruits such as raisins or chopped apricots for a unique taste.
