Description

Delicious and healthy raw cranberry nut bites that are easy to make and perfect for a snack.


Ingredients

Scale
  • 1 cup raw almonds
  • 1 cup raw walnuts
  • 1 cup unsweetened dried cranberries
  • 1/2 cup unsweetened coconut flakes
  • 1/4 cup chia seeds
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon sea salt

Instructions

  1. Place the raw almonds, walnuts, dried cranberries, coconut flakes, and chia seeds into a large bowl and mix thoroughly.
  2. In a small saucepan, gently heat the maple syrup (or honey) and vanilla extract over low flame until warm and slightly runny.
  3. Remove from heat and add the sea salt, stirring until dissolved.
  4. Drizzle the sweet mixture over the nut and fruit blend, stirring until everything is nicely coated.
  5. Prepare an 8×8-inch baking dish by lining it with parchment paper and transfer the mixture into the dish.
  6. Use a spatula or your hands to firmly press the mixture down into an even layer.
  7. Place the dish in the refrigerator for a minimum of 2 hours to allow it to firm up.
  8. Once set, lift the mixture out using the parchment paper and slice it into squares or bars.

Notes

  • For a delightful chocolate flavor, incorporate 1/4 cup of dark chocolate chips into the mixture before pressing it into the dish.
  • Feel free to swap out dried cranberries for other dried fruits such as raisins or chopped apricots for a unique taste.
