  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • ¼ cup grated Parmesan cheese (optional)
  • Fresh basil leaves for garnish (optional)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until softened.
  2. Add the minced garlic and cook for an additional 1 minute, stirring frequently to prevent burning.
  3. Stir in the grated zucchini and cook for about 5-7 minutes until it starts to soften and release moisture.
  4. Add the drained diced tomatoes, oregano, basil, red pepper flakes (if using), salt, and pepper. Stir well to combine.
  5. Reduce the heat to low and simmer for 10-15 minutes, allowing the flavors to meld together.
  6. If desired, stir in the grated Parmesan cheese just before serving for added creaminess.
  7. Serve warm, garnished with fresh basil leaves if desired.
