- 2 medium zucchinis, grated
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes, drained
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- ½ teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- ¼ cup grated Parmesan cheese (optional)
- Fresh basil leaves for garnish (optional)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until softened.
- Add the minced garlic and cook for an additional 1 minute, stirring frequently to prevent burning.
- Stir in the grated zucchini and cook for about 5-7 minutes until it starts to soften and release moisture.
- Add the drained diced tomatoes, oregano, basil, red pepper flakes (if using), salt, and pepper. Stir well to combine.
- Reduce the heat to low and simmer for 10-15 minutes, allowing the flavors to meld together.
- If desired, stir in the grated Parmesan cheese just before serving for added creaminess.
- Serve warm, garnished with fresh basil leaves if desired.

- For a creamier sauce, blend the mixture after cooking until smooth.
- Add cooked pasta or grains to the sauce for a complete meal.
