Instructions
- Preheat your oven to 350°F.
- In a mixing bowl, blend the flour, softened butter, and ¼ cup of sugar until the mixture resembles coarse crumbs.
- Incorporate the egg yolk and ice water, mixing until a dough forms.
- Firmly press the dough into a 9-inch tart pan, ensuring it covers the base and sides evenly.
- Use a fork to poke holes in the bottom, then refrigerate the crust for 15 minutes to firm up.
- Once chilled, place the crust in the oven and bake for 15-20 minutes, or until it turns a light golden brown.
- Take it out and allow it to cool for a few minutes.
- While the crust cools, prepare the filling by whisking together the fresh orange juice, grated orange peel, ¾ cup sugar, eggs, cornstarch, and sea salt in a separate bowl until fully combined and smooth.
- Carefully pour this mixture into the slightly cooled tart shell.
- Return the tart to the oven and bake for another 25-30 minutes, or until the filling is set and has a slight puff.
- After baking, brush the top with melted butter for a glossy finish.
- Allow the tart to cool to room temperature, then chill it in the refrigerator for at least 2 hours before slicing and serving.
