  • 3 large eggs
  • 2 tablespoons cornstarch
  • ¼ teaspoon sea salt
  • 1 tablespoon melted unsalted butter

Instructions

  1. Preheat your oven to 350°F.
  2. In a mixing bowl, blend the flour, softened butter, and ¼ cup of sugar until the mixture resembles coarse crumbs.
  3. Incorporate the egg yolk and ice water, mixing until a dough forms.
  4. Firmly press the dough into a 9-inch tart pan, ensuring it covers the base and sides evenly.
  5. Use a fork to poke holes in the bottom, then refrigerate the crust for 15 minutes to firm up.
  6. Once chilled, place the crust in the oven and bake for 15-20 minutes, or until it turns a light golden brown.
  7. Take it out and allow it to cool for a few minutes.
  8. While the crust cools, prepare the filling by whisking together the fresh orange juice, grated orange peel, ¾ cup sugar, eggs, cornstarch, and sea salt in a separate bowl until fully combined and smooth.
  9. Carefully pour this mixture into the slightly cooled tart shell.
  10. Return the tart to the oven and bake for another 25-30 minutes, or until the filling is set and has a slight puff.
  11. After baking, brush the top with melted butter for a glossy finish.
  12. Allow the tart to cool to room temperature, then chill it in the refrigerator for at least 2 hours before slicing and serving.
