Ingredients

  • 2 tablespoons olive oil
  • 2 large onions, thinly sliced
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 teaspoon balsamic vinegar
  • 1 package (1 sheet) puff pastry, thawed
  • 4 ounces goat cheese, crumbled
  • 1/4 cup heavy cream
  • 1 large egg
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat the oven to 400°F.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced onions, sugar, and salt. Cook, stirring occasionally, for about 20-25 minutes, until the onions are soft and caramelized.
  3. Stir in the balsamic vinegar and cook for an additional 2 minutes. Remove from heat and let cool slightly.
  4. On a lightly floured surface, roll out the puff pastry to fit a baking sheet. Cut the pastry into 4 equal squares and place them on the baking sheet lined with parchment paper.
  5. In a small bowl, whisk together the heavy cream, egg, thyme, and a pinch of black pepper.
  6. Spread the caramelized onions evenly over the pastry squares, leaving a small border around the edges.
  7. Pour the cream mixture over the onions and sprinkle the crumbled goat cheese on top.
  8. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and puffed.
  9. Remove from the oven and let cool for a few minutes before serving.

Notes

  • For a sweeter twist, add a tablespoon of honey to the caramelized onions before spreading them on the pastry.
  • You can also substitute feta cheese for goat cheese for a different flavor profile.
