- 2 tablespoons olive oil
- 2 large onions, thinly sliced
- 1 teaspoon sugar
- 1 teaspoon salt
- 1 teaspoon balsamic vinegar
- 1 package (1 sheet) puff pastry, thawed
- 4 ounces goat cheese, crumbled
- 1/4 cup heavy cream
- 1 large egg
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
- Freshly ground black pepper, to taste
Instructions
- Preheat the oven to 400°F.
- In a large skillet, heat the olive oil over medium heat. Add the sliced onions, sugar, and salt. Cook, stirring occasionally, for about 20-25 minutes, until the onions are soft and caramelized.
- Stir in the balsamic vinegar and cook for an additional 2 minutes. Remove from heat and let cool slightly.
- On a lightly floured surface, roll out the puff pastry to fit a baking sheet. Cut the pastry into 4 equal squares and place them on the baking sheet lined with parchment paper.
- In a small bowl, whisk together the heavy cream, egg, thyme, and a pinch of black pepper.
- Spread the caramelized onions evenly over the pastry squares, leaving a small border around the edges.
- Pour the cream mixture over the onions and sprinkle the crumbled goat cheese on top.
- Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and puffed.
- Remove from the oven and let cool for a few minutes before serving.
Notes
- For a sweeter twist, add a tablespoon of honey to the caramelized onions before spreading them on the pastry.
- You can also substitute feta cheese for goat cheese for a different flavor profile.
