Instructions

  1. In a large bowl, mix the mashed bananas with sweet rice flour, sugar, baking powder, and salt until everything is well incorporated.
  2. Slowly pour in the water, stirring continuously until the mixture becomes a smooth batter.
  3. If you’re adding chocolate chips, gently fold them in now.
  4. Prepare a microwave-safe dish by greasing it lightly or lining it with parchment paper.
  5. Pour the mochi batter into the dish, spreading it evenly across the bottom.
  6. Cover the dish with plastic wrap, ensuring there’s a small opening for steam to escape.
  7. Microwave the dish on high for about 2-3 minutes, or until the mochi has set and feels slightly firm when touched.
  8. Once cooked, let the mochi cool for around 10 minutes.
  9. Dust a clean surface with cornstarch, then carefully flip the mochi onto it.
