Instructions
- In a large bowl, mix the mashed bananas with sweet rice flour, sugar, baking powder, and salt until everything is well incorporated.
- Slowly pour in the water, stirring continuously until the mixture becomes a smooth batter.
- If you’re adding chocolate chips, gently fold them in now.
- Prepare a microwave-safe dish by greasing it lightly or lining it with parchment paper.
- Pour the mochi batter into the dish, spreading it evenly across the bottom.
- Cover the dish with plastic wrap, ensuring there’s a small opening for steam to escape.
- Microwave the dish on high for about 2-3 minutes, or until the mochi has set and feels slightly firm when touched.
- Once cooked, let the mochi cool for around 10 minutes.
- Dust a clean surface with cornstarch, then carefully flip the mochi onto it.
- Use a sharp knife to cut the mochi into squares or your preferred shapes.
- To prevent sticking, sprinkle additional cornstarch over the pieces.
- Enjoy them right away, or store in an airtight container at room temperature for up to two days.
