Ingredients

  • 2 pounds lamb shoulder, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 medium carrots, sliced
  • 3 medium potatoes, diced
  • 2 cups beef or lamb broth
  • 1 cup Guinness beer
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the lamb pieces and brown them on all sides, about 5-7 minutes. Remove the lamb and set aside.
  2. In the same pot, add the chopped onion and garlic. Sauté until the onion is translucent, about 3-4 minutes.
  3. Return the browned lamb to the pot. Add the carrots, potatoes, broth, Guinness, tomato paste, thyme, rosemary, salt, and pepper. Stir well to combine.
  4. Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 1.5 to 2 hours, or until the lamb is tender and the flavors have melded together. Stir occasionally.
  5. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.

Notes

  • For a thicker stew, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the stew during the last 10 minutes of cooking.
  • Feel free to add other vegetables like parsnips or turnips for extra flavor and nutrition.
