Description
A traditional Irish dish made with mashed potatoes, kale or cabbage, and green onions, perfect for a comforting meal.
Ingredients

- 2 pounds potatoes, peeled and cut into chunks
- 1/2 cup milk
- 4 tablespoons unsalted butter, divided
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup green onions, chopped
- 1 cup cooked kale or cabbage, chopped
Instructions
- Place the potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Cook for about 15-20 minutes, or until the potatoes are tender when pierced with a fork. Drain well.
- In a small saucepan, heat the milk and 2 tablespoons of butter over low heat until the butter is melted and the milk is warm.
- Return the drained potatoes to the pot and mash them until smooth. Gradually add the warm milk mixture, stirring until well combined.
- Stir in the salt, black pepper, green onions, and cooked kale or cabbage until evenly distributed.
- Transfer the colcannon to a serving dish and create a small well in the center. Add the remaining 2 tablespoons of butter to the well and let it melt before serving.
Notes
- For a creamier texture, you can substitute heavy cream for the milk.
- Add crispy bacon bits or sautéed onions for extra flavor and texture.
