Description

A traditional Irish dish made with mashed potatoes, kale or cabbage, and green onions, perfect for a comforting meal.


Ingredients

  • 2 pounds potatoes, peeled and cut into chunks
  • 1/2 cup milk
  • 4 tablespoons unsalted butter, divided
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup green onions, chopped
  • 1 cup cooked kale or cabbage, chopped

Instructions

  1. Place the potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Cook for about 15-20 minutes, or until the potatoes are tender when pierced with a fork. Drain well.
  2. In a small saucepan, heat the milk and 2 tablespoons of butter over low heat until the butter is melted and the milk is warm.
  3. Return the drained potatoes to the pot and mash them until smooth. Gradually add the warm milk mixture, stirring until well combined.
  4. Stir in the salt, black pepper, green onions, and cooked kale or cabbage until evenly distributed.
  5. Transfer the colcannon to a serving dish and create a small well in the center. Add the remaining 2 tablespoons of butter to the well and let it melt before serving.

Notes

  • For a creamier texture, you can substitute heavy cream for the milk.
  • Add crispy bacon bits or sautéed onions for extra flavor and texture.
