- 2 1/4 teaspoons active dry yeast (1 packet)
- 1/4 cup warm milk (110°F)
- 1/4 cup granulated sugar, divided
- 1/2 cup unsalted butter, softened
- 1/2 teaspoon salt
- 1 large egg
- 2 1/2 to 3 cups all-purpose flour
- 1/2 cup almond paste, crumbled
- 1/4 cup chopped almonds
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1/4 cup powdered sugar
- 1 tablespoon milk (for icing)
Instructions
- In a small bowl, combine warm milk, 1 tablespoon of sugar, and yeast. Let it sit for about 5-10 minutes until frothy.
- In a large mixing bowl, cream together the softened butter, remaining sugar, and salt. Add the egg and mix until well combined.
- Stir in the yeast mixture, vanilla extract, and almond extract.
- Gradually add 2 1/2 cups of flour to the mixture, stirring until a soft dough forms. If the dough is too sticky, add more flour, one tablespoon at a time, until manageable.
- Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for about 1 hour or until doubled in size.
- Once risen, punch down the dough and roll it out on a floured surface into a rectangle (about 12×18 inches).
- Spread the crumbled almond paste evenly over the dough, then sprinkle chopped almonds on top.
- Starting from one long side, roll the dough tightly into a log. Pinch the seams to seal.
- Cut the log into 12 equal pieces and place them in a greased baking dish. Cover and let rise for another 30 minutes.
- Preheat the oven to 350°F. Bake the rolls for 25-30 minutes or until golden brown.
- While the rolls are baking, mix powdered sugar and 1 tablespoon of milk in a small bowl to create a glaze.
- Once the rolls are done, drizzle the glaze over them while they are still warm.
Notes
- For a richer flavor, add a pinch of cinnamon to the almond filling.
- Substitute the almond paste with Nutella for a chocolate twist on these sweet rolls.
