Ingredients

  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1/4 cup warm milk (110°F)
  • 1/4 cup granulated sugar, divided
  • 1/2 cup unsalted butter, softened
  • 1/2 teaspoon salt
  • 1 large egg
  • 2 1/2 to 3 cups all-purpose flour
  • 1/2 cup almond paste, crumbled
  • 1/4 cup chopped almonds
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 cup powdered sugar
  • 1 tablespoon milk (for icing)

Instructions

  1. In a small bowl, combine warm milk, 1 tablespoon of sugar, and yeast. Let it sit for about 5-10 minutes until frothy.
  2. In a large mixing bowl, cream together the softened butter, remaining sugar, and salt. Add the egg and mix until well combined.
  3. Stir in the yeast mixture, vanilla extract, and almond extract.
  4. Gradually add 2 1/2 cups of flour to the mixture, stirring until a soft dough forms. If the dough is too sticky, add more flour, one tablespoon at a time, until manageable.
  5. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
  6. Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for about 1 hour or until doubled in size.
  7. Once risen, punch down the dough and roll it out on a floured surface into a rectangle (about 12×18 inches).
  8. Spread the crumbled almond paste evenly over the dough, then sprinkle chopped almonds on top.
  9. Starting from one long side, roll the dough tightly into a log. Pinch the seams to seal.
  10. Cut the log into 12 equal pieces and place them in a greased baking dish. Cover and let rise for another 30 minutes.
  11. Preheat the oven to 350°F. Bake the rolls for 25-30 minutes or until golden brown.
  12. While the rolls are baking, mix powdered sugar and 1 tablespoon of milk in a small bowl to create a glaze.
  13. Once the rolls are done, drizzle the glaze over them while they are still warm.

Notes

  • For a richer flavor, add a pinch of cinnamon to the almond filling.
  • Substitute the almond paste with Nutella for a chocolate twist on these sweet rolls.
