- 2 tablespoons vegetable oil
- 1 small onion, finely chopped

- 1 cup frozen peas
- 2 large eggs, beaten

- 1 tablespoon sweet soy sauce (kecap manis)
- 1 teaspoon sambal oelek (or to taste)
- Salt and pepper to taste
- 2 green onions, sliced for garnish
- Fresh cilantro for garnish (optional)
- 1 pound chicken breast, cut into 1-inch cubes
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 1 tablespoon honey
- 1 teaspoon garlic powder
- 1 teaspoon ground ginger
- Salt and pepper to taste
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a large skillet or wok, heat the vegetable oil over medium-high heat.
- Add the chopped onion and minced garlic, sautéing until fragrant and translucent, about 2-3 minutes.
- Incorporate the diced carrot and frozen peas, cooking for another 3-4 minutes until softened.
- Move the veggies to one side of the skillet to make space.
- Pour the beaten eggs into the cleared area of the skillet, scrambling until fully set.
- Mix the cooked eggs with the vegetables.
- Add the cooked rice, breaking up any clumps.
- Pour in the soy sauce, sweet soy sauce, sambal oelek, and season with salt and pepper.
- Stir everything together and heat through for about 3-5 minutes.
- Remove from heat and top with green onions and cilantro if desired.
- For the skewers, combine chicken cubes with soy sauce, vegetable oil, honey, garlic powder, ginger, salt, and pepper in a bowl.
- Mix well to coat the chicken evenly and thread onto soaked wooden skewers.
- Preheat your grill or grill pan to medium-high heat and grill the skewers for approximately 10-12 minutes, turning occasionally, until fully cooked and charred.
- Serve the Indonesian rice delight on plates, accompanied by the skewered chicken.

- Using day-old rice helps achieve the best texture for fried rice.
- Adjust the level of sambal oelek according to your spice preference.
