  • 1 teaspoon turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • ½ teaspoon chili powder
  • Salt to taste
  • ½ cup water or coconut milk (optional, for gravy)
  • Chopped cilantro for garnish (optional)

Instructions

  1. Heat oil in a pan. Add cumin seeds and let them splutter.
  2. Add onions and sauté until golden. Stir in garlic and ginger.
  3. Add chopped tomatoes and cook until soft.
  4. Add vegetables, spices, and a splash of water or coconut milk.
  5. Cover and cook on low until vegetables are tender.
  6. Adjust seasoning and garnish with cilantro. Serve with rice or flatbread.
