- 1 teaspoon turmeric
- 1 teaspoon ground coriander
- 1 teaspoon garam masala
- ½ teaspoon chili powder
- Salt to taste
- ½ cup water or coconut milk (optional, for gravy)
- Chopped cilantro for garnish (optional)
Instructions
- Heat oil in a pan. Add cumin seeds and let them splutter.
- Add onions and sauté until golden. Stir in garlic and ginger.
- Add chopped tomatoes and cook until soft.
- Add vegetables, spices, and a splash of water or coconut milk.
- Cover and cook on low until vegetables are tender.
- Adjust seasoning and garnish with cilantro. Serve with rice or flatbread.
