Instructions

  1. Begin by heating the canola oil in a large frying pan over medium heat. Once hot, add the cubed potatoes and sauté for about 10-12 minutes, stirring occasionally, until they turn a lovely golden brown and become tender.
  2. Next, incorporate the diced shallot and minced garlic into the pan, allowing them to cook for an additional 3-4 minutes until the shallot is soft and aromatic.
  3. Gently fold in the shredded fish, green peas, dill weed, salt, and pepper. Continue to cook for another 5 minutes, stirring carefully to ensure everything is well mixed and heated through.
  4. Meanwhile, prepare the eggs in a separate skillet, cooking them to your preference—either sunny-side up or poached.
  5. To serve, spoon the fish and potato mixture onto plates, placing a perfectly cooked egg on top of each serving, and finish with a sprinkle of chopped chives or dill for a fresh touch.
