Delight in this gourmet recipe for a Hummus Flight Board featuring za’atar twists and pickled carrots.

- 3 small bowls of hummus (classic, roasted red pepper, and beetroot hummus recommended)
- Olive oil and paprika for garnish
- 1 sheet puff pastry (thawed)
- 2 tbsp za’atar spice mix
- 2 tbsp olive oil
- 2 large carrots, julienned
- ½ cup white vinegar
- ½ cup water
- 1 tbsp sugar
- 1 tsp salt
- 1 garlic clove, crushed
- 1 tsp mustard seeds
Instructions
- Make pickled carrots (ahead): Bring vinegar, water, sugar, salt, garlic, and mustard seeds to a boil. Pour over julienned carrots in a jar. Cool and refrigerate at least 1 hour.
- Prepare za’atar twists: Preheat oven to 200°C (400°F). Brush puff pastry with olive oil, sprinkle with za’atar. Cut into strips, twist each strip and place on baking sheet. Bake 12–15 minutes until golden and crisp.
- Assemble board: Arrange hummus bowls on a large platter. Drizzle with olive oil and sprinkle paprika. Add za’atar twists and pickled carrots alongside for dipping.
Notes
- For best flavor, allow pickled carrots to sit for longer than 1 hour if possible.
- Experiment with different types of hummus for variety.
