Ingredients

  • 3 small bowls of hummus (classic, roasted red pepper, and beetroot hummus recommended)
  • Olive oil and paprika for garnish
  • 1 sheet puff pastry (thawed)
  • 2 tbsp za’atar spice mix
  • 2 tbsp olive oil
  • 2 large carrots, julienned
  • ½ cup white vinegar
  • ½ cup water
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 garlic clove, crushed
  • 1 tsp mustard seeds

Instructions

  1. Make pickled carrots (ahead): Bring vinegar, water, sugar, salt, garlic, and mustard seeds to a boil. Pour over julienned carrots in a jar. Cool and refrigerate at least 1 hour.
  2. Prepare za’atar twists: Preheat oven to 200°C (400°F). Brush puff pastry with olive oil, sprinkle with za’atar. Cut into strips, twist each strip and place on baking sheet. Bake 12–15 minutes until golden and crisp.
  3. Assemble board: Arrange hummus bowls on a large platter. Drizzle with olive oil and sprinkle paprika. Add za’atar twists and pickled carrots alongside for dipping.

Notes

  • For best flavor, allow pickled carrots to sit for longer than 1 hour if possible.
  • Experiment with different types of hummus for variety.
