Description
Huevos Rancheros is a delicious and easy Mexican breakfast dish featuring eggs, black beans, and salsa served on corn tortillas.

- 6 large eggs
- 1 cup canned black beans, rinsed and drained
- 1 cup salsa (store-bought or homemade)
- 4 corn tortillas
- 1 avocado, sliced
- 1/2 cup crumbled queso fresco or feta cheese
- 1/4 cup chopped fresh cilantro
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- In a medium skillet, heat the olive oil over medium heat. Add the black beans and cook for about 3-4 minutes until warmed through. Season with salt and pepper to taste. Remove from heat and set aside.
- In the same skillet, add the corn tortillas one at a time, cooking for about 30 seconds on each side until they are slightly crispy but still pliable. Remove and place on plates.
- In a separate pan, fry the eggs to your liking (sunny-side up or over-easy works well). Season with salt and pepper.
- To assemble, place a tortilla on each plate, top with a generous spoonful of black beans, followed by a fried egg.
- Spoon salsa over the eggs, then add sliced avocado and sprinkle with queso fresco and cilantro.
- Serve immediately and enjoy your delicious Huevos Rancheros!
Notes
- For a spicier kick, add diced jalapeños or a splash of hot sauce to the salsa.
- You can substitute the black beans with refried beans or pinto beans for a different flavor profile.
