Description

Ingredients

  • 6 large eggs
  • 1 cup canned black beans, rinsed and drained
  • 1 cup salsa (store-bought or homemade)
  • 4 corn tortillas
  • 1 avocado, sliced
  • 1/2 cup crumbled queso fresco or feta cheese
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a medium skillet, heat the olive oil over medium heat. Add the black beans and cook for about 3-4 minutes until warmed through. Season with salt and pepper to taste. Remove from heat and set aside.
  2. In the same skillet, add the corn tortillas one at a time, cooking for about 30 seconds on each side until they are slightly crispy but still pliable. Remove and place on plates.
  3. In a separate pan, fry the eggs to your liking (sunny-side up or over-easy works well). Season with salt and pepper.
  4. To assemble, place a tortilla on each plate, top with a generous spoonful of black beans, followed by a fried egg.
  5. Spoon salsa over the eggs, then add sliced avocado and sprinkle with queso fresco and cilantro.
  6. Serve immediately and enjoy your delicious Huevos Rancheros!
