- 2 tablespoons extra virgin olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the quinoa mixture and toss gently to combine.
- Taste and adjust seasoning if necessary.
- Serve immediately, garnished with fresh parsley if desired.
