- 2 ripe bananas, mashed
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract

- 1/2 cup ube halaya (ube jam)
- 1/4 cup milk
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large mixing bowl, combine the mashed bananas and sugar, mixing until well combined.
- Add the softened butter and mix until creamy.
- Beat in the eggs one at a time, followed by the vanilla extract.
- In a separate bowl, whisk together the baking soda, salt, and flour.
- Gradually add the dry ingredients to the banana mixture, mixing until just combined. Do not overmix.
- In a small bowl, combine the ube halaya and milk, stirring until smooth.
- Gently fold half of the banana bread batter into the ube mixture.
- Spoon alternating dollops of the plain banana batter and the ube batter into the prepared loaf pan.
- Use a knife or skewer to swirl the two batters together for a marbled effect.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
- For added flavor, consider adding 1/2 cup of chopped walnuts or pecans to the batter.
- To make it a bit sweeter, you can increase the sugar to 1 1/4 cups.
