  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs

  • 1 1/2 cups all-purpose flour
  • 1/2 cup ube halaya (ube jam)
  • 1/4 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large mixing bowl, combine the mashed bananas and sugar, mixing until well combined.
  3. Add the softened butter and mix until creamy.
  4. Beat in the eggs one at a time, followed by the vanilla extract.
  5. In a separate bowl, whisk together the baking soda, salt, and flour.
  6. Gradually add the dry ingredients to the banana mixture, mixing until just combined. Do not overmix.
  7. In a small bowl, combine the ube halaya and milk, stirring until smooth.
  8. Gently fold half of the banana bread batter into the ube mixture.
  9. Spoon alternating dollops of the plain banana batter and the ube batter into the prepared loaf pan.
  10. Use a knife or skewer to swirl the two batters together for a marbled effect.
  11. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  12. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • For added flavor, consider adding 1/2 cup of chopped walnuts or pecans to the batter.
  • To make it a bit sweeter, you can increase the sugar to 1 1/4 cups.
