A simple and delicious recipe for making candied ginger at home.
Ingredients
Scale
- 2 cups fresh ginger root, peeled and cut into thin slices
- 4 cups water
- 2 cups granulated sugar, divided
- 1 teaspoon vanilla extract (optional)
- 1/2 teaspoon ground cinnamon (optional)
Instructions
- Place the sliced ginger in a medium-sized pot and cover it with water.
- Bring the mixture to a vigorous boil over medium-high heat.
- Once boiling, lower the heat and let it simmer gently for about 30 minutes, or until the ginger is soft and tender.
- Drain the ginger slices, saving 1 cup of the liquid.
- In the same pot, mix the saved ginger water with 1 cup of sugar and heat until it reaches a boil, stirring constantly.
- Once the sugar has melted, return the tender ginger slices to the pot and stir to coat in the syrup.
- Reduce the heat and let it simmer for an additional 45 minutes, stirring occasionally, until the ginger pieces turn clear and the syrup thickens.
- Using a slotted spoon, lift the ginger slices out of the syrup and place them on a wire rack to cool for about an hour.
- After cooling, roll the ginger pieces in the remaining cup of sugar until thoroughly coated.
- Allow the treats to dry on the rack for another 1 to 2 hours before transferring them to an airtight container for storage.
