A simple and delicious recipe for making candied ginger at home.


Ingredients

  • 2 cups fresh ginger root, peeled and cut into thin slices
  • 4 cups water
  • 2 cups granulated sugar, divided
  • 1 teaspoon vanilla extract (optional)
  • 1/2 teaspoon ground cinnamon (optional)

Instructions

  1. Place the sliced ginger in a medium-sized pot and cover it with water.
  2. Bring the mixture to a vigorous boil over medium-high heat.
  3. Once boiling, lower the heat and let it simmer gently for about 30 minutes, or until the ginger is soft and tender.
  4. Drain the ginger slices, saving 1 cup of the liquid.
  5. In the same pot, mix the saved ginger water with 1 cup of sugar and heat until it reaches a boil, stirring constantly.
  6. Once the sugar has melted, return the tender ginger slices to the pot and stir to coat in the syrup.
  7. Reduce the heat and let it simmer for an additional 45 minutes, stirring occasionally, until the ginger pieces turn clear and the syrup thickens.
  8. Using a slotted spoon, lift the ginger slices out of the syrup and place them on a wire rack to cool for about an hour.
  9. After cooling, roll the ginger pieces in the remaining cup of sugar until thoroughly coated.
  10. Allow the treats to dry on the rack for another 1 to 2 hours before transferring them to an airtight container for storage.
