Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a 9-inch round cake pan.
- In a mixing bowl, whisk together the whole grain flour and baking soda until well blended.
- In a separate bowl, combine the pumpkin puree, almond butter, maple syrup, eggs, and chicken broth, mixing until smooth.
- Gradually fold the wet mixture into the dry ingredients, stirring gently until just combined.
- If the batter appears too dense, add a splash more of chicken broth to achieve the desired consistency.
- Transfer the batter into the prepared cake pan, leveling the top with a spatula.
- If desired, scatter carob chips across the surface for an extra treat.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, let the cake cool in the pan for about 10 minutes before moving it to a wire rack to cool completely before serving.
