Delicious hot honey chili crisp corn fritters served with a refreshing yogurt dip.
Ingredients

- 2 cups fresh or frozen corn kernels
- 1 cup all-purpose flour
- 1 tsp baking powder
- 2 eggs
- ¼ cup milk
- 1 small red chili, finely chopped (adjust to taste)
- 2 tbsp honey
- 1 tsp smoked paprika
- Salt and pepper to taste
- Vegetable oil for frying
- 1 cup plain Greek yogurt (for the dip)
- Juice of ½ lemon (for the dip)
- 1 garlic clove, minced (for the dip)
- Salt and pepper to taste (for the dip)
- Optional: chopped fresh cilantro or mint (for the dip)
Instructions
- Make the batter: In a large bowl, whisk eggs and milk. Add flour, baking powder, smoked paprika, salt, and pepper. Fold in corn kernels, chopped chili, and honey.
- Heat the oil: Heat a few tablespoons of vegetable oil in a frying pan over medium heat.
- Fry the fritters: Spoon tablespoon-sized portions of batter into the hot oil. Flatten slightly with the back of the spoon. Cook 2–3 minutes per side until golden and crisp. Drain on paper towels.
- Prepare the dip: Mix yogurt, lemon juice, garlic, salt, and pepper. Add herbs if using.
- Serve: Plate fritters warm with a bowl of yogurt dip for dunking.
Notes
- Adjust the amount of chili based on your spice preference.
- For a creamier dip, you can add more yogurt.
- These fritters are best served warm.
