  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 cup unsalted butter, cold and cubed
  • 3/4 cup buttermilk
  • 1 pound boneless, skinless chicken thighs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup honey
  • 1 tablespoon hot sauce (adjust to taste)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 450°F. Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, salt, and baking soda. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.
  3. Pour in the buttermilk and stir until just combined. Do not overmix. Turn the dough out onto a floured surface and gently knead a few times until it comes together. Pat the dough into a 1-inch thick rectangle.
  4. Cut out biscuits using a round cutter or a glass, and place them on the prepared baking sheet. Gather any scraps, knead gently, and cut out more biscuits until all the dough is used.
  5. Bake the biscuits for 12-15 minutes or until golden brown. Remove from the oven and let cool slightly.
  6. While the biscuits are baking, season the chicken thighs with garlic powder, paprika, salt, and pepper. Heat a skillet over medium-high heat and add a little oil. Cook the chicken for 5-7 minutes per side until cooked through and golden.
  7. In a small saucepan, combine the honey and hot sauce over low heat, stirring until warmed and well combined.
  8. To assemble, slice the biscuits in half, place a piece of chicken on the bottom half, drizzle with hot honey, and top with the other half of the biscuit. Garnish with chopped parsley if desired.
