- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1/4 cup unsalted butter, cold and cubed
- 3/4 cup buttermilk
- 1 pound boneless, skinless chicken thighs
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1/2 cup honey
- 1 tablespoon hot sauce (adjust to taste)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 450°F. Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, baking powder, salt, and baking soda. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.
- Pour in the buttermilk and stir until just combined. Do not overmix. Turn the dough out onto a floured surface and gently knead a few times until it comes together. Pat the dough into a 1-inch thick rectangle.
- Cut out biscuits using a round cutter or a glass, and place them on the prepared baking sheet. Gather any scraps, knead gently, and cut out more biscuits until all the dough is used.
- Bake the biscuits for 12-15 minutes or until golden brown. Remove from the oven and let cool slightly.
- While the biscuits are baking, season the chicken thighs with garlic powder, paprika, salt, and pepper. Heat a skillet over medium-high heat and add a little oil. Cook the chicken for 5-7 minutes per side until cooked through and golden.
- In a small saucepan, combine the honey and hot sauce over low heat, stirring until warmed and well combined.
- To assemble, slice the biscuits in half, place a piece of chicken on the bottom half, drizzle with hot honey, and top with the other half of the biscuit. Garnish with chopped parsley if desired.
Notes
- For a spicier kick, add more hot sauce to the honey mixture or use spicy chicken seasoning.
- Try adding pickles or coleslaw inside the biscuit for an extra crunch and flavor.
