- 3 to 4 pounds whole chicken, cleaned and patted dry
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
- 1 tablespoon garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup honey
- 1/2 cup cranberry sauce (jellied or whole berry)
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon red pepper flakes (optional)
- Fresh rosemary sprigs for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a small bowl, mix together the olive oil, chopped rosemary, minced garlic, salt, and black pepper. Rub this mixture all over the chicken, including under the skin for extra flavor.
- Place the chicken in a roasting pan, breast side up.
- In another bowl, combine the honey, cranberry sauce, Dijon mustard, apple cider vinegar, and red pepper flakes (if using). Stir until well mixed.
- Pour half of the cranberry glaze over the chicken, making sure to coat it evenly. Reserve the remaining glaze for later.
- Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear. Baste the chicken with the remaining glaze halfway through cooking.
- Once cooked, remove the chicken from the oven and let it rest for 10-15 minutes before carving.
- Garnish with fresh rosemary sprigs and serve with your choice of sides.
Notes
- For a crispy skin, broil the chicken for the last 5 minutes of cooking.
- Add root vegetables like carrots and potatoes to the roasting pan for a complete meal.
