Ingredients

  • 3 to 4 pounds whole chicken, cleaned and patted dry
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
  • 1 tablespoon garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup honey
  • 1/2 cup cranberry sauce (jellied or whole berry)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon red pepper flakes (optional)
  • Fresh rosemary sprigs for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix together the olive oil, chopped rosemary, minced garlic, salt, and black pepper. Rub this mixture all over the chicken, including under the skin for extra flavor.
  3. Place the chicken in a roasting pan, breast side up.
  4. In another bowl, combine the honey, cranberry sauce, Dijon mustard, apple cider vinegar, and red pepper flakes (if using). Stir until well mixed.
  5. Pour half of the cranberry glaze over the chicken, making sure to coat it evenly. Reserve the remaining glaze for later.
  6. Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear. Baste the chicken with the remaining glaze halfway through cooking.
  7. Once cooked, remove the chicken from the oven and let it rest for 10-15 minutes before carving.
  8. Garnish with fresh rosemary sprigs and serve with your choice of sides.

Notes

  • For a crispy skin, broil the chicken for the last 5 minutes of cooking.
  • Add root vegetables like carrots and potatoes to the roasting pan for a complete meal.
