Ingredients

  • 2 (6-ounce) salmon fillets
  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. In a small bowl, whisk together the honey, Dijon mustard, olive oil, lemon juice, garlic powder, salt, and pepper until well combined.
  3. Place the salmon fillets skin-side down on the prepared baking sheet. Brush the honey mustard mixture generously over the top of each fillet.
  4. Bake in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
  5. Remove from the oven and let rest for a couple of minutes. Garnish with fresh parsley before serving.

Notes

  • For a spicy kick, add a pinch of cayenne pepper to the honey mustard mixture.
  • Serve the salmon over a bed of quinoa or alongside roasted vegetables for a complete meal.
