Ingredients

  • 1 packet active dry yeast
  • 2 tablespoons brown sugar
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 cup baking soda
  • 1 large egg
  • 1 tablespoon water
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 1 medium onion, finely chopped
  • Coarse sea salt, for sprinkling

Instructions

  1. In a large bowl, combine warm water, yeast, and brown sugar. Let it sit for about 5 minutes until frothy.
  2. Add flour and salt to the yeast mixture and knead until a smooth dough forms.
  3. Cover the dough and let it rise in a warm place for about 1 hour, or until doubled in size.
  4. Preheat the oven to 450°F (230°C) and line a baking sheet with parchment paper.
  5. In a large pot, bring 10 cups of water and baking soda to a boil.
  6. Divide the dough into small pieces and shape them into pretzel bites.
  7. Boil the pretzel bites in the baking soda water for about 30 seconds, then remove and place on the prepared baking sheet.
  8. In a small bowl, whisk together the egg and water, then brush the mixture over the pretzel bites.
  9. In another bowl, mix honey, Dijon mustard, and chopped onion. Spoon this mixture over the pretzel bites.
  10. Sprinkle coarse sea salt on top and bake for 12-15 minutes or until golden brown.
  11. Let cool slightly before serving.
