- 2 medium kohlrabi bulbs, peeled and cut into 1-inch cubes
- 2 tablespoons olive oil
- 2 tablespoons honey
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, combine the olive oil, honey, lemon juice, lemon zest, garlic powder, salt, and black pepper. Whisk until well blended.
- Add the kohlrabi cubes to the bowl and toss until they are evenly coated with the honey lemon mixture.
- Spread the coated kohlrabi in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 25-30 minutes, or until the kohlrabi is tender and golden brown, stirring halfway through for even cooking.
- Remove from the oven and let cool for a few minutes. Garnish with chopped parsley before serving.
