Ingredients

  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon sugar
  • 4 large eggs
  • 1 cup heavy cream
  • 1/4 cup honey
  • 1 teaspoon dried culinary lavender
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. In a medium saucepan, combine water, butter, salt, and sugar. Bring to a boil over medium heat.
  3. Once boiling, remove from heat and stir in flour until the mixture forms a ball. Let it cool for about 5 minutes.
  4. Add eggs one at a time, mixing well after each addition until the dough is smooth and glossy.
  5. Using a pastry bag or a spoon, drop tablespoon-sized mounds of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 20-25 minutes, or until the puffs are golden brown and puffed up. Remove from the oven and let them cool completely on a wire rack.
  7. While the puffs are cooling, prepare the cream filling by whipping the heavy cream until soft peaks form.
  8. Gradually add honey, lavender, and vanilla extract, continuing to whip until stiff peaks form.
  9. Once the puffs are cool, use a sharp knife to cut a small slit in the side of each puff.
  10. Fill a pastry bag with the lavender cream and pipe it into each puff until filled.
  11. Serve immediately or refrigerate for up to 2 hours before serving.

Notes

  • For a lighter version, substitute half of the heavy cream with Greek yogurt.
  • You can experiment with different flavors by adding citrus zest or using flavored extracts in the cream filling.
