- 1 cup water
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 1 teaspoon sugar
- 4 large eggs
- 1 cup heavy cream
- 1/4 cup honey
- 1 teaspoon dried culinary lavender
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- In a medium saucepan, combine water, butter, salt, and sugar. Bring to a boil over medium heat.
- Once boiling, remove from heat and stir in flour until the mixture forms a ball. Let it cool for about 5 minutes.
- Add eggs one at a time, mixing well after each addition until the dough is smooth and glossy.
- Using a pastry bag or a spoon, drop tablespoon-sized mounds of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 20-25 minutes, or until the puffs are golden brown and puffed up. Remove from the oven and let them cool completely on a wire rack.
- While the puffs are cooling, prepare the cream filling by whipping the heavy cream until soft peaks form.
- Gradually add honey, lavender, and vanilla extract, continuing to whip until stiff peaks form.
- Once the puffs are cool, use a sharp knife to cut a small slit in the side of each puff.
- Fill a pastry bag with the lavender cream and pipe it into each puff until filled.
- Serve immediately or refrigerate for up to 2 hours before serving.
Notes
- For a lighter version, substitute half of the heavy cream with Greek yogurt.
- You can experiment with different flavors by adding citrus zest or using flavored extracts in the cream filling.
