A refreshing and vibrant Honey-Glazed Carrot & Fennel Slaw that combines the sweetness of honey with the crunch of fresh vegetables.
Ingredients

- 2 large carrots, peeled and shredded
- 1 medium bulb of fennel, finely chopped
- 1/4 cup purple cabbage, thinly sliced
- 1/4 cup fresh cilantro, roughly chopped
- 1/4 cup honey
- 2 tablespoons white wine vinegar
- 1 tablespoon avocado oil
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
Instructions
- In a mixing bowl, combine the shredded carrots, chopped fennel, sliced purple cabbage, and chopped cilantro. Gently toss until well combined.
- In a separate small bowl, blend the honey, white wine vinegar, avocado oil, sea salt, and black pepper until smooth and uniform.
- Drizzle the honey mixture over the vegetable medley and mix thoroughly to coat every piece.
- Cover the bowl with a lid or plastic wrap and chill in the refrigerator for at least 30 minutes to enhance the flavors.
- Just before serving, stir the salad again to ensure the dressing is evenly distributed.
Notes
- For added crunch, consider tossing in some pumpkin seeds or chopped walnuts right before serving.
- If you prefer a vegan alternative, swap the honey for agave syrup.
- For an extra zing, include a dash of cayenne pepper in the dressing.
