Ingredients

  • 2 large carrots, peeled and shredded
  • 1 medium bulb of fennel, finely chopped
  • 1/4 cup purple cabbage, thinly sliced
  • 1/4 cup fresh cilantro, roughly chopped
  • 1/4 cup honey
  • 2 tablespoons white wine vinegar
  • 1 tablespoon avocado oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. In a mixing bowl, combine the shredded carrots, chopped fennel, sliced purple cabbage, and chopped cilantro. Gently toss until well combined.
  2. In a separate small bowl, blend the honey, white wine vinegar, avocado oil, sea salt, and black pepper until smooth and uniform.
  3. Drizzle the honey mixture over the vegetable medley and mix thoroughly to coat every piece.
  4. Cover the bowl with a lid or plastic wrap and chill in the refrigerator for at least 30 minutes to enhance the flavors.
  5. Just before serving, stir the salad again to ensure the dressing is evenly distributed.
