- 2 cups phyllo pastry, thawed
- 1 cup unsalted butter, melted
- 2 cups finely chopped almonds
- 1 teaspoon ground cinnamon
- 1 cup honey
- 1/2 cup water
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- Chopped pistachios for topping (optional)
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish with melted butter.
- In a mixing bowl, combine the finely chopped almonds with ground cinnamon and set aside.
- On a clean surface, lay down a sheet of phyllo pastry and brush it with melted butter.
- Layer another sheet on top and repeat the buttering process until you have a stack of five sheets.
- Take a small amount of the almond-cinnamon mixture and spread it evenly along one edge of the phyllo stack.
- Carefully roll the pastry from the edge with the filling, creating a tight log shape.
- Place the rolled pastry seam-side down in the greased baking dish.
- Continue this process with the remaining phyllo and almond mixture until all are rolled and arranged in the dish.
- Brush the tops of the rolls generously with melted butter.
- Bake in the preheated oven for approximately 25-30 minutes, or until golden brown and crisp.
- While the rolls are baking, prepare the syrup by combining honey, water, granulated sugar, vanilla extract, and salt in a saucepan.
- Bring this mixture to a boil over medium heat, then lower the heat and let it simmer for about 10 minutes before removing it from the heat to cool slightly.
- As soon as the baklava rolls are out of the oven, pour the warm syrup over them, ensuring they are well-coated.
- Allow the rolls to absorb the syrup for at least one hour before slicing and serving.
- If desired, sprinkle with chopped pistachios for an added crunch and visual appeal.
