Ingredients

  • 2 cups phyllo pastry, thawed
  • 1 cup unsalted butter, melted
  • 2 cups finely chopped almonds
  • 1 teaspoon ground cinnamon
  • 1 cup honey
  • 1/2 cup water
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Chopped pistachios for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish with melted butter.
  2. In a mixing bowl, combine the finely chopped almonds with ground cinnamon and set aside.
  3. On a clean surface, lay down a sheet of phyllo pastry and brush it with melted butter.
  4. Layer another sheet on top and repeat the buttering process until you have a stack of five sheets.
  5. Take a small amount of the almond-cinnamon mixture and spread it evenly along one edge of the phyllo stack.
  6. Carefully roll the pastry from the edge with the filling, creating a tight log shape.
  7. Place the rolled pastry seam-side down in the greased baking dish.
  8. Continue this process with the remaining phyllo and almond mixture until all are rolled and arranged in the dish.
  9. Brush the tops of the rolls generously with melted butter.
  10. Bake in the preheated oven for approximately 25-30 minutes, or until golden brown and crisp.
  11. While the rolls are baking, prepare the syrup by combining honey, water, granulated sugar, vanilla extract, and salt in a saucepan.
  12. Bring this mixture to a boil over medium heat, then lower the heat and let it simmer for about 10 minutes before removing it from the heat to cool slightly.
  13. As soon as the baklava rolls are out of the oven, pour the warm syrup over them, ensuring they are well-coated.
  14. Allow the rolls to absorb the syrup for at least one hour before slicing and serving.
  15. If desired, sprinkle with chopped pistachios for an added crunch and visual appeal.
