- 2 pounds beef chuck, cut into 1-inch pieces
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 medium carrots, chopped
- 2 cloves garlic, minced
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- 1 cup beef stock
- 1 cup stout beer
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch mixed with 2 tablespoons cold water
- 1 package (14 ounces) ready-made pie crusts (2 crusts)
- 1 egg, whisked (for egg wash)
Instructions
- Begin by heating the olive oil in a large Dutch oven over medium heat. Add the beef pieces in batches, searing them until they develop a rich brown crust. Once browned, remove the beef and set aside.
- In the same pot, toss in the chopped onion and carrots, sautéing them for about 5 minutes until they soften. Add the minced garlic and continue to cook for an additional minute.
- Incorporate the tomato paste, thyme, rosemary, sea salt, and black pepper into the mixture, stirring for 2 minutes to release the flavors.
- Return the browned beef to the pot, then pour in the beef stock, stout beer, and soy sauce. Bring the mixture to a gentle boil, then cover and reduce the heat to low. Allow it to simmer for 1.5 to 2 hours, or until the beef is fork-tender.
- Once the beef is tender, stir in the cornstarch slurry and let it cook for another 5 minutes until the sauce thickens. Remove from heat and let it cool for a bit.
- Roll out one pie crust and line a 9-inch pie dish with it. Spoon the beef filling into the crust, spreading it evenly.
- Roll out the second pie crust and place it over the filling. Crimp the edges to seal and cut a few vents in the top to allow steam to escape. Brush the surface with the whisked egg.
- Place the pie in a preheated oven at 400°F (200°C) and bake for 30-35 minutes, or until the crust is beautifully golden.
- Allow the pie to rest for 10 minutes before slicing and serving.
Notes
- For an extra depth of flavor, consider adding a tablespoon of brown sugar to the filling.
- Feel free to replace the stout with a non-alcoholic option or additional beef stock for a different taste experience.
