Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 medium carrots, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 cup beef stock
  • 1 cup stout beer
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water
  • 1 package (14 ounces) ready-made pie crusts (2 crusts)
  • 1 egg, whisked (for egg wash)

Instructions

  1. Begin by heating the olive oil in a large Dutch oven over medium heat. Add the beef pieces in batches, searing them until they develop a rich brown crust. Once browned, remove the beef and set aside.
  2. In the same pot, toss in the chopped onion and carrots, sautéing them for about 5 minutes until they soften. Add the minced garlic and continue to cook for an additional minute.
  3. Incorporate the tomato paste, thyme, rosemary, sea salt, and black pepper into the mixture, stirring for 2 minutes to release the flavors.
  4. Return the browned beef to the pot, then pour in the beef stock, stout beer, and soy sauce. Bring the mixture to a gentle boil, then cover and reduce the heat to low. Allow it to simmer for 1.5 to 2 hours, or until the beef is fork-tender.
  5. Once the beef is tender, stir in the cornstarch slurry and let it cook for another 5 minutes until the sauce thickens. Remove from heat and let it cool for a bit.
  6. Roll out one pie crust and line a 9-inch pie dish with it. Spoon the beef filling into the crust, spreading it evenly.
  7. Roll out the second pie crust and place it over the filling. Crimp the edges to seal and cut a few vents in the top to allow steam to escape. Brush the surface with the whisked egg.
  8. Place the pie in a preheated oven at 400°F (200°C) and bake for 30-35 minutes, or until the crust is beautifully golden.
  9. Allow the pie to rest for 10 minutes before slicing and serving.

Notes

  • For an extra depth of flavor, consider adding a tablespoon of brown sugar to the filling.
  • Feel free to replace the stout with a non-alcoholic option or additional beef stock for a different taste experience.
