Ingredients

  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup erythritol or your preferred keto sweetener
  • 3 large eggs
  • ½ cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • ½ cup unsweetened coconut cream (for filling)
  • 1 tablespoon powdered erythritol (for filling)
  • ½ teaspoon vanilla extract (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the almond flour, cocoa powder, baking powder, baking soda, salt, and erythritol. Mix well to ensure there are no clumps.
  3. In another bowl, whisk together the eggs, almond milk, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until fully combined. The batter will be thick.
  5. Using a spoon or a cookie scoop, drop heaping tablespoons of batter onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes, or until the tops are set and a toothpick inserted in the center comes out clean. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  7. While the cookies are cooling, prepare the filling by mixing the coconut cream, powdered erythritol, and vanilla extract in a bowl until smooth and creamy.
  8. Once the cookies are completely cool, spread a generous amount of the filling on the flat side of one cookie and sandwich it with another cookie, flat sides together. Repeat with the remaining cookies.
  9. Serve immediately or refrigerate for 30 minutes to firm up the filling.
