- ½ cup unsweetened cocoa powder
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup erythritol or your preferred keto sweetener
- 3 large eggs
- ½ cup unsweetened almond milk
- 1 teaspoon vanilla extract
- ½ cup unsweetened coconut cream (for filling)
- 1 tablespoon powdered erythritol (for filling)
- ½ teaspoon vanilla extract (for filling)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the almond flour, cocoa powder, baking powder, baking soda, salt, and erythritol. Mix well to ensure there are no clumps.
- In another bowl, whisk together the eggs, almond milk, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and mix until fully combined. The batter will be thick.
- Using a spoon or a cookie scoop, drop heaping tablespoons of batter onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the tops are set and a toothpick inserted in the center comes out clean. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- While the cookies are cooling, prepare the filling by mixing the coconut cream, powdered erythritol, and vanilla extract in a bowl until smooth and creamy.
- Once the cookies are completely cool, spread a generous amount of the filling on the flat side of one cookie and sandwich it with another cookie, flat sides together. Repeat with the remaining cookies.
- Serve immediately or refrigerate for 30 minutes to firm up the filling.
