- 8 large eggs
- 1/4 cup milk or cream
- 1 cup mixed vegetables (bell peppers, spinach, onions, etc.)
- 1 cup cheese (cheddar, mozzarella, feta, etc.)
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Fresh herbs (optional)
Instructions
- Preheat oven to 375°F.
- Sauté vegetables in olive oil until softened.
- Whisk together eggs, milk, salt, pepper, and half of the cheese.
- Pour egg mixture over vegetables in the skillet. Let it cook for 2-3 minutes.
- Transfer skillet to oven and bake for 12-15 minutes until set.
- Serve warm or at room temperature.
