Ingredients

  • 45 ripe bananas, sliced
  • 1 box vanilla wafers
  • 2 cups whole milk
  • 1/2 cup sugar
  • 3 tbsp cornstarch
  • Pinch of salt
  • 4 large egg yolks
  • 2 tbsp butter
  • 1 tsp vanilla extract
  • Whipped cream for topping (optional)

 


Instructions

  • Whisk sugar, cornstarch, and salt in a saucepan. Gradually add milk and cook over medium heat until thickened.
  • Temper the egg yolks by whisking in hot milk, then cook for 2-3 minutes more until thick.
  • Stir in butter and vanilla.
  • Layer vanilla wafers, banana slices, and pudding in a dish.
  • Chill for 4 hours or overnight before serving.

Notes

  • For a thicker pudding, cook for an additional minute after adding the eggs.
