Ingredients

  • 2 cups mashed potatoes (about 4 medium potatoes)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped green onions
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup all-purpose flour (plus extra for dusting)
  • 1 large egg
  • Vegetable oil (for frying)

Instructions

  1. Begin by peeling and boiling the potatoes in salted water until tender, about 15-20 minutes. Drain and mash until smooth. Allow to cool slightly.
  2. In a large mixing bowl, combine the mashed potatoes, Parmesan cheese, parsley, green onions, garlic powder, paprika, cumin, salt, and black pepper. Mix until well combined.
  3. Add the flour and egg to the potato mixture. Stir until the mixture is smooth and holds together. If it’s too sticky, add a little more flour as needed.
  4. Dust your hands with flour and shape the mixture into small patties, about 2 inches in diameter and 1/2 inch thick.
  5. Heat about 1/4 inch of vegetable oil in a large skillet over medium heat. Once hot, carefully add the patties in batches, being sure not to overcrowd the pan.
  6. Fry the patties for about 3-4 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.
  7. Serve warm as a snack or appetizer.

Notes

  • For a spicy kick, add a pinch of cayenne pepper to the potato mixture.
  • Try adding finely chopped bell peppers or olives for extra flavor and texture.
