A delicious and easy recipe for Homemade Algerian Maakouda, perfect as a snack or appetizer.

- 2 cups mashed potatoes (about 4 medium potatoes)
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped green onions
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup all-purpose flour (plus extra for dusting)
- 1 large egg
- Vegetable oil (for frying)
Instructions
- Begin by peeling and boiling the potatoes in salted water until tender, about 15-20 minutes. Drain and mash until smooth. Allow to cool slightly.
- In a large mixing bowl, combine the mashed potatoes, Parmesan cheese, parsley, green onions, garlic powder, paprika, cumin, salt, and black pepper. Mix until well combined.
- Add the flour and egg to the potato mixture. Stir until the mixture is smooth and holds together. If it’s too sticky, add a little more flour as needed.
- Dust your hands with flour and shape the mixture into small patties, about 2 inches in diameter and 1/2 inch thick.
- Heat about 1/4 inch of vegetable oil in a large skillet over medium heat. Once hot, carefully add the patties in batches, being sure not to overcrowd the pan.
- Fry the patties for about 3-4 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.
- Serve warm as a snack or appetizer.
Notes
- For a spicy kick, add a pinch of cayenne pepper to the potato mixture.
- Try adding finely chopped bell peppers or olives for extra flavor and texture.
