Description
Indulge in a festive treat with this creamy and delicious Holiday Almond Raisin Creamy Rice, perfect for the holiday season.
Ingredients
Scale
- 2 cups long-grain white rice
- 4 cups water
- 1 cup whole milk
- 1 cup heavy cream
- 1/2 cup raisins
- 1/2 cup sliced almonds
- 1/4 cup brown sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 teaspoon nutmeg
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a large saucepan, combine the rinsed rice and water. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and the water is absorbed.
- In a separate bowl, mix together the milk, heavy cream, brown sugar, vanilla extract, ground cinnamon, salt, and nutmeg.
- Once the rice is cooked, stir in the milk mixture, raisins, and sliced almonds. Cook over low heat for an additional 5-7 minutes, stirring occasionally, until the mixture is creamy and heated through.
- Remove from heat and let it sit for 5 minutes to thicken slightly before serving.
Notes
- For a nut-free version, omit the almonds and substitute with sunflower seeds.
- For added flavor, consider incorporating a tablespoon of maple syrup or honey in place of brown sugar.
