Description

Herbed Leek Tarts are a delightful pastry filled with sautéed leeks and a creamy cheese mixture, perfect for a savory snack or appetizer.


Ingredients

  • 2 large leeks, cleaned and sliced (white and light green parts only)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1 tablespoon fresh lemon juice
  • 1 package (1 sheet) puff pastry, thawed
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 400°F.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced leeks, salt, and pepper. Sauté for about 10 minutes until the leeks are soft and translucent.
  3. Stir in the thyme and oregano, cooking for an additional 2 minutes. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine the ricotta cheese, grated Parmesan, egg, and lemon juice. Stir in the sautéed leeks until well combined.
  5. On a lightly floured surface, roll out the puff pastry to fit your tart pan or baking sheet. Cut the pastry into squares or circles, depending on your preference.
  6. Place the pastry on a parchment-lined baking sheet.
  7. Spoon the leek and cheese mixture onto the center of each pastry piece, leaving a small border around the edges.
  8. Fold the edges of the pastry over the filling slightly and brush the exposed pastry with the beaten egg.
  9. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and puffed.
  10. Allow to cool for a few minutes before serving.

Notes

  • For a twist, try adding cooked bacon or ham to the filling for extra flavor.
  • You can also substitute the ricotta with goat cheese for a tangy variation.
