Herbed Leek Tarts are a delightful pastry filled with sautéed leeks and a creamy cheese mixture, perfect for a savory snack or appetizer.

- 2 large leeks, cleaned and sliced (white and light green parts only)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 1 tablespoon fresh lemon juice
- 1 package (1 sheet) puff pastry, thawed
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 400°F.
- In a large skillet, heat the olive oil over medium heat. Add the sliced leeks, salt, and pepper. Sauté for about 10 minutes until the leeks are soft and translucent.
- Stir in the thyme and oregano, cooking for an additional 2 minutes. Remove from heat and let cool slightly.
- In a mixing bowl, combine the ricotta cheese, grated Parmesan, egg, and lemon juice. Stir in the sautéed leeks until well combined.
- On a lightly floured surface, roll out the puff pastry to fit your tart pan or baking sheet. Cut the pastry into squares or circles, depending on your preference.
- Place the pastry on a parchment-lined baking sheet.
- Spoon the leek and cheese mixture onto the center of each pastry piece, leaving a small border around the edges.
- Fold the edges of the pastry over the filling slightly and brush the exposed pastry with the beaten egg.
- Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and puffed.
- Allow to cool for a few minutes before serving.
Notes
- For a twist, try adding cooked bacon or ham to the filling for extra flavor.
- You can also substitute the ricotta with goat cheese for a tangy variation.
