Ingredients

- 2 (6-ounce) salmon fillets
- 4 ounces feta cheese, crumbled
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 1 tablespoon fresh chives, chopped
- 1 teaspoon lemon zest
- 1 tablespoon olive oil
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
- In a medium bowl, combine the crumbled feta cheese, parsley, dill, chives, lemon zest, olive oil, salt, and pepper. Mix until well combined.
- Place the salmon fillets skin-side down on the prepared baking sheet.
- Evenly spread the herb and feta mixture over the top of each salmon fillet.
- Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Remove from the oven and let it rest for a few minutes. Serve with lemon wedges on the side.
Notes
- For a spicy kick, add a pinch of red pepper flakes to the feta mixture.
- Serve the salmon over a bed of sautéed spinach or alongside roasted vegetables for a complete meal.
