Ingredients

  • 2 (6-ounce) salmon fillets
  • 4 ounces feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh chives, chopped
  • 1 teaspoon lemon zest
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. In a medium bowl, combine the crumbled feta cheese, parsley, dill, chives, lemon zest, olive oil, salt, and pepper. Mix until well combined.
  3. Place the salmon fillets skin-side down on the prepared baking sheet.
  4. Evenly spread the herb and feta mixture over the top of each salmon fillet.
  5. Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  6. Remove from the oven and let it rest for a few minutes. Serve with lemon wedges on the side.

Notes

  • For a spicy kick, add a pinch of red pepper flakes to the feta mixture.
  • Serve the salmon over a bed of sautéed spinach or alongside roasted vegetables for a complete meal.
