- 1 cup hemp seeds

- 1/4 teaspoon black pepper
- 2 large eggs
- 1 tablespoon Dijon mustard
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 400°F.
- Line a baking sheet with parchment paper.
- In a shallow bowl, combine the hemp seeds, breadcrumbs, garlic powder, onion powder, paprika, salt, and black pepper. Mix well.
- In another bowl, whisk together the eggs and Dijon mustard until smooth.
- Dip each chicken strip into the egg mixture, allowing any excess to drip off.
- Coat the chicken in the hemp seed mixture, pressing gently to ensure it sticks.
- Place the coated chicken tenders on the prepared baking sheet.
- Drizzle olive oil over the top of the tenders for added crispiness.
- Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the coating is golden brown.
- Let the chicken tenders cool for a few minutes before serving.
