A unique twist on traditional sushi using fresh heirloom tomatoes.
Ingredients

- 4 large heirloom tomatoes
- 1 cup sushi rice
- 2 tablespoons rice vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 avocado, sliced
- 1 cucumber, julienned
- Nori sheets
- Wasabi and soy sauce for serving
Instructions
- Cook the sushi rice according to package instructions and let it cool.
- In a small bowl, mix rice vinegar, sugar, and salt until dissolved, then fold into the cooled rice.
- Slice the tops off the heirloom tomatoes and scoop out the insides carefully.
- Fill each tomato with a layer of sushi rice, followed by avocado slices and cucumber.
- Wrap the filled tomatoes with nori sheets, if desired.
- Serve with wasabi and soy sauce on the side.
Notes
- Choose a variety of heirloom tomatoes for different flavors and colors.
- Make sure the sushi rice is sticky enough to hold together.
- Feel free to add other fillings like crab or shrimp for a non-vegetarian option.
