Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan by greasing it and placing a circle of parchment paper at the bottom.
- In a spacious bowl, whisk together the almond flour, shredded coconut, erythritol, baking powder, baking soda, and salt until well blended.
- In a separate bowl, beat the softened butter until creamy and fluffy. Incorporate the eggs one at a time, ensuring each is fully mixed in before adding the next. Mix in the vanilla extract and almond milk until combined.
- Slowly combine the dry mixture with the wet ingredients, stirring gently until just incorporated. Fold in the crushed pistachios and fresh raspberries carefully.
- Transfer the batter into the prepared cake pan, leveling the surface with a spatula. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake rest in the pan for about 10 minutes before moving it to a wire rack to cool completely.
