  • 1 cup heavy whipping cream
  • 1/4 cup powdered erythritol
  • 1 teaspoon vanilla extract (for the cream)
  • 2 cups mixed berries (strawberries, blueberries, raspberries)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan with grease and parchment paper.
  2. In a mixing bowl, blend together the almond flour, erythritol, baking powder, and salt until well incorporated.
  3. In a separate bowl, whisk the melted butter, eggs, and vanilla extract until smooth.
  4. Gradually combine the wet mixture with the dry ingredients, stirring until just blended.
  5. Transfer the batter to the prepared pan and level the surface.
  6. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Once baked, let the cake cool in the pan for about 10 minutes before moving it to a wire rack to cool completely.
  8. While the cake cools, whip the heavy cream with powdered erythritol and vanilla extract until soft peaks form.

  11. Repeat the process until all components are used, topping with whipped cream and a sprinkle of berries.
  12. Refrigerate the parfait for at least an hour to enhance the flavors before serving.
