Ingredients

  • 1 tablespoon olive oil
  • 10 cloves garlic, minced
  • 1 medium onion, chopped
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 can (15 ounces) diced tomatoes, drained
  • 1/2 cup whole wheat bread, cubed
  • 2 large eggs
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic, smoked paprika, and red pepper flakes (if using). Cook for an additional 2 minutes until fragrant.
  3. Pour in the vegetable broth and water, then add the drained diced tomatoes. Bring the mixture to a simmer.
  4. Add the cubed whole wheat bread and let it simmer for about 10 minutes, stirring occasionally, until the bread softens.
  5. In a small bowl, beat the eggs. Slowly drizzle the beaten eggs into the soup while stirring gently to create egg ribbons.
  6. Season with salt and pepper to taste. Remove from heat and let it sit for a few minutes.
  7. Serve hot, garnished with fresh chopped parsley.
