- 2 cups rolled oats
- 1 cup finely shredded carrots (about 2 medium-sized)
- 1/2 cup unsweetened applesauce
- 1/2 cup plant-based milk (such as almond or oat milk)
- 1/4 cup honey or agave syrup
- 1/4 cup chopped pecans (optional)
- 1/4 cup dried cranberries (optional)
- 1 teaspoon vanilla essence
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon sea salt
- 2 large eggs
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan by greasing it or lining it with parchment paper.
- In a large bowl, mix together the rolled oats, shredded carrots, applesauce, plant-based milk, honey (or agave syrup), and vanilla essence until well blended.
- In another bowl, beat the eggs and combine them with the baking soda, cinnamon, ginger, and sea salt.
- Pour the egg mixture into the oat mixture and stir until everything is evenly mixed.
- If desired, gently fold in the chopped pecans and dried cranberries.
- Transfer the batter into the prepared cake pan, smoothing the top with a spatula.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, let the cake cool in the pan for about 10 minutes before moving it to a wire rack to cool completely.
Notes
- For a plant-based alternative, substitute the eggs with 1/2 cup of mashed avocado or 1/4 cup of chia seeds mixed with 3/4 cup of water.
- Enhance the flavor by adding a light cream cheese frosting or a scoop of coconut yogurt on top for a creamy finish.
