Ingredients

  • 1 cup finely shredded carrots (about 2 medium-sized)
  • 1/2 cup unsweetened applesauce
  • 1/2 cup plant-based milk (such as almond or oat milk)
  • 1/4 cup honey or agave syrup
  • 1/4 cup chopped pecans (optional)
  • 1/4 cup dried cranberries (optional)
  • 1 teaspoon vanilla essence
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon sea salt
  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan by greasing it or lining it with parchment paper.
  2. In a large bowl, mix together the rolled oats, shredded carrots, applesauce, plant-based milk, honey (or agave syrup), and vanilla essence until well blended.
  3. In another bowl, beat the eggs and combine them with the baking soda, cinnamon, ginger, and sea salt.
  4. Pour the egg mixture into the oat mixture and stir until everything is evenly mixed.
  5. If desired, gently fold in the chopped pecans and dried cranberries.
  6. Transfer the batter into the prepared cake pan, smoothing the top with a spatula.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Once baked, let the cake cool in the pan for about 10 minutes before moving it to a wire rack to cool completely.

Notes

  • For a plant-based alternative, substitute the eggs with 1/2 cup of mashed avocado or 1/4 cup of chia seeds mixed with 3/4 cup of water.
