- 1/2 cup almond butter
- 1/4 cup honey or maple syrup
- 1/2 cup assorted chopped nuts (such as walnuts, almonds, and pecans)
- 1/4 cup pumpkin seeds
- 1/4 cup sunflower seeds
- 1/4 cup dark chocolate chips (optional)
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon sea salt
Instructions
- Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
- In a mixing bowl, blend together the rolled oats, almond butter, honey (or maple syrup), vanilla extract, ground cinnamon, and sea salt until the mixture is smooth and cohesive.
- Fold in the chopped assorted nuts, pumpkin seeds, sunflower seeds, and dark chocolate chips if using, ensuring everything is well mixed.
- Scoop out portions of the mixture using a tablespoon and roll them into small balls, placing them on the lined baking sheet with enough space between each.
- Gently press down on each ball to create a flat cookie shape.
- Bake in the oven for about 10-12 minutes, or until the edges turn a lovely golden brown.
- Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

- These cookies can be stored in an airtight container for up to a week.
