Ingredients

  • 1 ½ cups almond flour
  • ½ cup coconut flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ cup erythritol (or preferred sugar substitute)
  • ½ cup unsweetened applesauce
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup chopped walnuts or pecans (optional)
  • ¼ cup dried cranberries (sugar-free, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine almond flour, coconut flour, baking soda, salt, and ground cinnamon. Mix well.
  3. In another bowl, whisk together erythritol, applesauce, egg, and vanilla extract until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms. If desired, fold in chopped nuts and dried cranberries.
  5. Using a tablespoon, scoop out the dough and place it onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each cookie slightly with the back of the spoon.
  6. Bake for 12-15 minutes or until the edges are golden brown. Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a chocolate twist, add ¼ cup of sugar-free dark chocolate chips to the dough.
  • Substitute the nuts with sunflower seeds for a nut-free version, perfect for those with nut allergies.
