- 1 ½ cups almond flour
- ½ cup coconut flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ cup erythritol (or preferred sugar substitute)
- ½ cup unsweetened applesauce
- 1 large egg
- 1 teaspoon vanilla extract
- ½ cup chopped walnuts or pecans (optional)
- ¼ cup dried cranberries (sugar-free, optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine almond flour, coconut flour, baking soda, salt, and ground cinnamon. Mix well.
- In another bowl, whisk together erythritol, applesauce, egg, and vanilla extract until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms. If desired, fold in chopped nuts and dried cranberries.
- Using a tablespoon, scoop out the dough and place it onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each cookie slightly with the back of the spoon.
- Bake for 12-15 minutes or until the edges are golden brown. Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a chocolate twist, add ¼ cup of sugar-free dark chocolate chips to the dough.
- Substitute the nuts with sunflower seeds for a nut-free version, perfect for those with nut allergies.
