- 1 cup cooked quinoa
- 1/2 cup rolled oats
- 1/4 cup unsweetened cocoa powder
- 1/4 cup honey or maple syrup
- 1/4 cup almond butter or peanut butter
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup dark chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a spacious bowl, mix together the cooked quinoa, rolled oats, cocoa powder, honey or maple syrup, almond butter or peanut butter, vanilla extract, and salt until thoroughly blended.
- If using, gently fold in the dark chocolate chips.
- Using a tablespoon, drop rounded mounds of the mixture onto the prepared baking sheet, spacing them about 2 inches apart.
- Lightly press down on each mound to flatten them slightly.
- Bake in the oven for 10-12 minutes, or until the edges start to firm up.
- Remove from the oven and allow to cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
Notes
- For an extra crunch, consider adding 1/4 cup of your favorite chopped nuts or seeds.
- To enhance the health benefits, swap the sweetener for mashed ripe banana or unsweetened applesauce.
