Ingredients

  • 1 cup cooked quinoa
  • 1/2 cup rolled oats
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup honey or maple syrup
  • 1/4 cup almond butter or peanut butter
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup dark chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a spacious bowl, mix together the cooked quinoa, rolled oats, cocoa powder, honey or maple syrup, almond butter or peanut butter, vanilla extract, and salt until thoroughly blended.
  3. If using, gently fold in the dark chocolate chips.
  4. Using a tablespoon, drop rounded mounds of the mixture onto the prepared baking sheet, spacing them about 2 inches apart.
  5. Lightly press down on each mound to flatten them slightly.
  6. Bake in the oven for 10-12 minutes, or until the edges start to firm up.
  7. Remove from the oven and allow to cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.

  • For an extra crunch, consider adding 1/4 cup of your favorite chopped nuts or seeds.
