A delicious and healthy recipe for chicken salad puffs that combines shredded chicken with Greek yogurt and fresh ingredients, all wrapped in flaky puff pastry.

- 2 cups cooked chicken, shredded
- 1/2 cup Greek yogurt
- 1/4 cup mayonnaise
- 1/2 cup celery, finely chopped
- 1/4 cup red grapes, halved
- 1/4 cup almonds, chopped
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 package (8 ounces) puff pastry sheets, thawed
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- In a large bowl, combine the shredded chicken, Greek yogurt, mayonnaise, celery, grapes, almonds, Dijon mustard, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Roll out the puff pastry sheets on a lightly floured surface. Cut the pastry into 3-inch squares.
- Place a tablespoon of the chicken salad mixture in the center of each pastry square. Fold the corners of the pastry over the filling to create a pocket and pinch to seal.
- Place the filled puffs on the prepared baking sheet. Brush the tops with the beaten egg to give them a golden color when baked.
- Bake in the preheated oven for 15-20 minutes, or until the pastry is puffed and golden brown.
- Allow to cool slightly before serving.
Notes
- For a lighter version, substitute the mayonnaise with additional Greek yogurt.
- For a flavor twist, add a teaspoon of curry powder to the chicken salad mixture.
