Ingredients

  • 2 cups dried figs, chopped and stems removed
  • 1 cup whole wheat flour
  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon sea salt
  • Water, as needed (up to 1/4 cup)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. In a saucepan, combine the chopped figs with enough water to cover them, and simmer over medium heat for about 5-7 minutes until they become tender.
  3. Once softened, remove from heat and allow them to cool.
  4. In a separate bowl, whisk together the whole wheat flour, rolled oats, almond flour, baking soda, ground cinnamon, and sea salt.
  5. In another bowl, blend the honey (or maple syrup), applesauce, and vanilla extract until smooth.
  6. Gradually incorporate the wet mixture into the dry ingredients, stirring until a cohesive dough forms.
  7. If the mixture appears too crumbly, add water a tablespoon at a time until it binds well.
  8. On a floured surface, roll the dough into a rectangle approximately 1/4 inch thick.
  9. Evenly distribute the fig filling over the dough, ensuring to leave a small border.
  10. Carefully roll the dough from one end to the other, creating a log shape.
  11. Cut the log into 1-inch segments and arrange them on the prepared baking sheet.
  12. Bake for 15-20 minutes, or until the edges turn a lovely golden brown.
  13. Allow the fig delights to cool on a wire rack before enjoying.
