- 2 boneless, skinless chicken breasts (about 1 pound)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup chicken broth
- 1 cup couscous
- 1 cup mixed vegetables (such as bell peppers, zucchini, and carrots), chopped
- 2 tablespoons fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Instructions
- Preheat your oven to 375°F (190°C).
- In a small bowl, mix together the garlic powder, onion powder, dried thyme, paprika, salt, and pepper. Rub this spice mixture all over the chicken breasts.
- In an oven-safe skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and sear for about 3-4 minutes on each side until golden brown.
- Remove the chicken from the skillet and set aside. In the same skillet, add the mixed vegetables and sauté for 2-3 minutes until slightly tender.
- Pour in the chicken broth and bring to a simmer. Stir in the couscous, then place the seared chicken breasts on top of the couscous and vegetables.
- Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven. Bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F).
- Remove from the oven and let it sit for 5 minutes before serving. Fluff the couscous with a fork and garnish with fresh parsley. Serve with lemon wedges on the side.
Notes
- For added flavor, marinate the chicken in the spice mixture for at least 30 minutes before cooking.
- Substitute quinoa for couscous for a gluten-free option, adjusting the cooking time as needed.
