  • 2 boneless, skinless chicken breasts (about 1 pound)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 1 cup couscous
  • 1 cup mixed vegetables (such as bell peppers, zucchini, and carrots), chopped
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix together the garlic powder, onion powder, dried thyme, paprika, salt, and pepper. Rub this spice mixture all over the chicken breasts.
  3. In an oven-safe skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and sear for about 3-4 minutes on each side until golden brown.
  4. Remove the chicken from the skillet and set aside. In the same skillet, add the mixed vegetables and sauté for 2-3 minutes until slightly tender.
  5. Pour in the chicken broth and bring to a simmer. Stir in the couscous, then place the seared chicken breasts on top of the couscous and vegetables.
  6. Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven. Bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F).
  7. Remove from the oven and let it sit for 5 minutes before serving. Fluff the couscous with a fork and garnish with fresh parsley. Serve with lemon wedges on the side.
